I’ve teamed up with Schwartz to show you how you can make easy hearty family meals. I’ll be using their sausage casserole mix with my own recipe interpretation. It’s packed with veggies and it’s really comforting and filling on these cold winter nights. You can also change it around according to what vegetables you have in your fridge or cupboard, and you could add potatoes instead of the beans, but this recipe cuts down on those carbs which makes it slightly healthier.
I have made it a one pot wonder so less washing up. I can’t get enough of one pot meals and tray bakes that you just chuck it all in (more or less). It’s perfect for time poor parents who need to get the goodness in to family meals. I didn’t peel the carrot either, just topped and tailed it, and you couldn’t tell once it was cooked. Leaving the peel on keeps more of the vitamins in too.
Ingredients
1 packet of Schwartz sausage casserole mix, made up with 300ml cold water (available from Tesco)
8 sausages
1 400g can of chopped tomatoes
1 400g can of cannelini beans
1 medium onion, chopped
2 cloves of garlic, crushed
1-2 sticks of celery, chopped
1 large carrot, chopped
1/2 a savoy cabbage, chopped
Method
- Brown the sausages in a little oil in the casserole pot over a medium/ high heat for approximately 5 minutes.
- Chop up the vegetables and crush the garlic. Remove the browned sausages from the pan and set aside.
- Add the carrots, onions, garlic and celery to the pan and cook over a medium/high heat for 10 mins until softened and lightly golden.
- Return the sausages to the pan and add the tinned tomatoes, and Schwartz casserole mixed with the 300ml cold water. Stir all the ingredients together.
- Bring to the boil, then reduce to a simmer for 20 mins until the sauce has thickened slightly.
- Stir in the drained Cannelini beans and chopped cabbage, then cover and simmer for a further 5 mins until the cabbage has softened.

It turns out so delicious, I promise! The children even enjoyed it, although Daniel didn’t eat the ‘sauce.’ He did have a couple of carrots though. I will definitely be making it again.

The Schwartz sausage casserole packet mix adds a depth of flavour from the herbs and spices, so it doesn’t need much added seasoning, maybe a twist of salt and pepper to taste. For those worried about the lack of mashed potato or other starch, it is very filling with the Cannelini beans. My husband was initially disappointed there would be no potatoes, but then he was surprised how filling it was. Plus, he had seconds. I call that a win.
